It's Advent time! Just before the Nicholas-day, I told you last year the legend about St. Nicholas. This year I’ll reveal my wife’s favorite advent cake recipe - the cake is really delicious and I recommend it gladly. Especially if the nuts come from the own walnut harvest in the garden ...
For the cake:100g butter, 100g powdered sugar, 2 yolks (L-eggs), 2 tablespoon yogurt, 1 baking powder, 180 up to 200gr flour
For the icing:
ca. ½ jar of jam (e.g. bitter orange jam, apricot jam) or apple must, the white of 2 eggs (L-eggs), 80gr powdered sugar (to taste), 120gr milled walnuts
Preparation method:
Stir the butter with the sugar until frothy. Add the egg yolks and the yogurt under constant stirring. Finally, mix the baking powder and the flour. Bake the pastry in a round baking form (22cm), mapped out with baking paper (or butter and flour) at about 180 ° C.
Sprinkle the jam / apple must with a kitchen brush thinly on the finished, still warm cake.
Whip the egg whites with the icing sugar to white “egg snow”. Carefully stir the milled walnuts and distribute the egg-nut mixture evenly on the cake. Bake at 160 degrees Celsius until the snow white mass gets a golden yellow crust.
